Let’s Have Tilapia For Dinner!

INGREDIENTS
1/4 cup butter (1/2 stick)
1 tbsp finely minced shallot
1 tbsp freshly grated lime zest
2 tsp fresh lime juice
1 tsp fresh minced Thai or Serrano chili, including seeds
1/2 tsp salt
4 tilapia fillets, seasoned on both sides with salt and pepper
1 cup flour, seasoned with salt and pepper
2 tbsp vegetable oil
 
PREPARATION
In small bowl mix together butter, shallot, lime zest and juice, chili and salt. Refrigerate until ready to use. Coat the seasoned fish in flour and pan-fry in hot oil. Serve fish with chili butter.
