Fat Toad Farm Goat’s Milk Caramel

Fat Toad Farms is a family farm located in the hills of Central Vermont at the end of a long, winding road that gets pretty muddy, but makes for a lovely drive otherwise. Their goal is to produce the highest quality traditional goat’s milk caramel sauce (cajeta) using the freshest goat’s milk available.

They used to milk their own goats (starting with a sweet doe named Jupiter), but when demand for these incredible sauces began to rise, they partnered with their neighbors, Vermont Creamery and their Ayers Brook Goat Dairy, for a steady supply of fresh, local goat milk. They continue to make the caramel sauce right on their farm, meticulously hand-stirring every small batch to velvety perfection.

Oh, I almost forgot. Swirl a little of this magic into your morning coffee for a unique flavor you’ve probably not experienced.

Enjoy!

Grilled Apples

Here is the recipe I used as a guide. I didn’t measure anything, though. I just sprinkled away until I thought everything looked right. Cinnamon, honey, chocolate, and caramel all made it onto the apples, and each pairing and combination I tried was super delicious. Pretty hard to go wrong here.

Grilled Cinnamon Apple Slices Drizzled With Honey
     Recipe from extraordinary  bbq.com.

Ingredients
3 Honeycrisp apples, cut into 3/4 inch circle slices, cored if you wish
3 Tbsp. melted butter
3 tsp. cinnamon
2 Tbsp. honey

Instructions
Brush melted butter onto both sides of apple slices.
Grill apples for about 6 minutes on each side, until grill marks appear.
Top with cinnamon and honey (or whatever toppings you like) as soon as you take them off the grill.

I used Honeycrisp apples because that's what I had at home, but I'd love to pick up a variety of flavors and do a taste test to see how the flavors are different coming off the grill. I'm also thinking grilled apples tucked into a turkey sandwich or grilled cheese or diced on top of a salad would be neat to try.

The Great Apple Harvest runs through October 4.

The Best Part of Dinner Is Dessert

We have JoAnn Sitton at Cheesecake Love to thank for these sweet creations that we'll have in store for you to enjoy this fall and throughout the holidays.

Apple Pie
A colossal 9-inch apple pie stuffed with 4 pounds of Washington State Granny Smith apples. The apples are slightly cooked in butter before going in pie to give even more flavor and help the pie keep its dome shape when baked. Slice into one of these beauties and witness the stacks of cinnamon apples, just begging for vanilla ice cream. You'll only find this mountain of warm apples and cinnamon at Central Market.

Apple Love Crisp
If you’re not feeding an army, why cook for one? This loaf-sized apple crisp is a manageable size, so you’re not buried in leftovers. It’s frozen when you purchase it, so simply slide the tin into the oven and you’re on your way to a warm and delicious apple dessert. This one also is a real winner with vanilla ice cream, but I’m pretty sure you didn’t need me to tell you that.

Caramel Apple Love Cheesecake
Clear the table. Make room for 3.5 pounds of creamy cheesecake, standing 4 inches tall on a thick, apple, brown sugar, and cinnamon blonde brownie crust, and topped with caramel glaze, apples and pecans. This dessert is a statement piece. Something you can take to a dinner party or unveil to your own wowed guests. The presentation is seriously impressive. The height, thick crust, and apples and pecans piled high on top really make for a dessert you can be proud to serve after a special meal.
