The Chai’s Have It

We discovered Tipu’s Chai, a new chai drink in Montana. Tipu’s founder Bipin Patel uses his Indian grandmother’s chai recipe and adds all-natural ingredients like organic evaporated cane juice for the Sweet & Spicy variety. The chai is easy to make at home or on the go and the soluble nature of the product makes a refreshing iced chai as well.

Patel was inspired to create the new quick brew product line after talking to his customers who wanted an authentic Indian chai without the long brewing process. We have the following Chai Now products in all of our stores:

Tipu’s Chai Now™ The Simple Life: The soluble microground Black Chai Tea is certified kosher and made without sweeteners or milk products. It is pure black tea with organic spices and ginger. Add a level teaspoon to hot milk for a rich and creamy chai latte or to hot water and milk for a more traditional taste. Add your favorite sweetener and enjoy.

Tipu’s Chai Now™ Sweet & Spicy: This product is sweetened and spiced just right and simply needs boiling water and your choice of milk, almond milk, soy or another milk substitute for a creamy cup of chai. The Sweet & Spicy sweetened chai tea blend is made with high-quality black tea, organic spices, organic evaporated cane juice and ginger for a healthy cup of authentic chai.  The chai is also certified organic and kosher.

Bipin will also be at the following stores from 11am-3:30pm for demonstrations and tastings, make sure to stop by and see him:

180 Years in the Making

For six generations now the Barber family has been making cheese on their farm in Ditcheat, Somerset, the area of the world where cheddar cheese originated.  They start with rich milk from their own herd of cows, a unique collection of starter cultures, then use the traditional ‘cheddaring' techniques of hand turning to create just the right body and a truly authentic product.

The secret behind Barber's 1833's unique character lies in the use of a collection of traditional starter cultures for which the family are the sole guardians. These cultures are the most important ingredient in determining the flavor and quality of the finished cheese. Barber's cultures are derived from bacteria naturally occurring in the milk of the region and have been isolated for their ability to produce great flavors and traditional cheddar character.

This cheddar has a smooth texture, with both sweet and savoury notes and it is an ideal addition to the cheeseboard topped with a bit of chutney or simply melted on toast.  Also pairs perfectly with a crisp cider.

Fresh Out of the Oven: New Handmade Sour Cream Pound Cake

These pound cakes weighing in at just a little over a pound and a half, all start with a batter that has both sour cream and butter to help increase moisture and add to the amazing flavor. Clearly absent from the list of ingredient list are preservatives, which is why the cakes will be made fresh daily, in each store.

With seven new flavors, the first question I asked our Bakery Lead, Edouard Damez, is which do I try first.  Without missing a beat, Edouard said "Tropical, it is my favorite." All of the delicious new flavors are noted below:

  • Tropical – Blend of diced mango, pineapple and shredded coconut with a splash of rum.
  • Strawberry Almond – Swiss strawberry Jam mixed in the rich batter with almond extract. Topped with sliced almonds.
  • Wild Maine Blueberry -Pack with juicy rich in anti-oxidant Wild Maine Blueberries.
  • White Chocolate Cranberry Orange – Belgium white chocolate mixed in with orange zest and whole cranberries.
  • Double Chocolate – Sour cream based chocolate batter made with Valrhona cocoa powder and the addition of Callebaut bittersweet chocolate chips. Simply sinful.
  • Marble – We swirl together our “not so” plain batter with our chocolate batter to create this masterpiece.
  • Plain – Moist, rich batter made with sour cream and butter. Flavored with pure Madagascar vanilla.

And just as we ask our chefs to stretch their creativity for new flavor combinations, we also challenge them to look for new ways to present their delicious creations.  This time the team found reusable wooden baking molds from France, these "loaf baskets" bake beautifully, up to 450F with parchment or a liner, or can be filled with cookies, spiced nuts or chocolates.

You can find these taste treats starting Wednesday, February 20, in the Bakery department of all Central Market locations.
