Here’s how we do it. We start with creamy, dreamy goat cheese from Cherry Glen Farm, a 58-acre agricultural reserve in Montgomery County, Maryland. The fine folks there single-handedly breed and milk show-quality, blue-ribbon Alpine, Toggenburg, Saanen and LaMancha goats and produce award-winning goat cheese recognized by the American Cheese Society.
To maintain quality control, they milk twice a day, seven days a week, and they do not import any milk from third-party suppliers. In addition, Cherry Glen uses no animal rennet; instead the cheese is produced using vegetable rennet. These farmers also care about the planet: to help reduce their carbon footprint, they installed a solar-powered system for their facility.
So now that you feel good about the foundation, let’s talk about the accoutrements. We fold in high-quality ingredients, such as European Morello cherries, vine-ripened tomatoes, caramelized yellow onions, aged balsamic vinegar and agave nectar to create incredible flavor profiles.
